TACO SOUP

Ingredients:
  • 1 lb. ground beef
  • 1 large onion, chopped
  • 1 can black beans
  • 2 cans pinto beans (you can also substitute 1 can with chili beans)
  • 1 can creamed corn
  • 1 can golden hominy
  • 1 can Rotel tomatoes with chiles
  • 1 large can of diced tomatoes (15 oz.)
  • 1 can Mexican seasoned stewed tomatoes
  • 1 envelope dry Ranch dressing mix
  • ½ or full packet of Taco Bell Taco Seasoning (I used entire pkg)
  • 2 tablespoons cumin (more or less, according to taste)
  • Shredded cheddar cheese
  • Sour Cream
  • Doritos or Fritos


  • Instructions:
    Brown your ground beef. Drain and set aside. Add a little olive oil to pan and cook onions until soft and clear. Add meat and onion mixture to crockpot.

    Open cans for the remaining ingredients (DO NOT DRAIN!!) and add to mixture. Add Ranch dressing mix, taco seasoning and cumin. Heat thoroughly. Served with grated cheese, sour cream and chips.

    NOTE: You can throw in any type of canned beans. Kidney beans and chili beans also work well. Experiment!
