Recipe of the Month
Blueberry Jell-O Salad

- 2 small boxes of Raspberry Jell-O (or 1 large)
- 2 C. boiling water
- 20 oz. can crushed pineapple (drained)
- 21 oz. can blueberry pie filling
Topping:
- 8 oz. cream cheese (softened)
- 1/2 C. sour cream
- 1/2 C. granulated sugar
- 1 t. vanilla
Instructions:
- Mix boiling water and Jell-O. Stir until Jell-O is dissolved.
- Add pineapple and pie filing.
- Refrigerate for several hours, until set.
- With mixer, blend remaining ingredients and spread over top of Jell-O.
- Serve chilled.
- This recipe works well in 9 X 13 pan, cut into squares for serving.
- Substitution: Use Cherry Jell-O and Cherry pie filling - yummy!
