Recipe of the Month

TACO SOUP

Ingredients:
  • 1 lb. ground beef
  • 1 large onion, chopped
  • 1 can black beans
  • 2 cans pinto beans (you can also substitute 1 can with chili beans)
  • 1 can creamed corn
  • 1 can golden hominy
  • 1 can Rotel tomatoes with chiles
  • 1 large can of diced tomatoes (15 oz.)
  • 1 can Mexican seasoned stewed tomatoes
  • 1 envelope dry Ranch dressing mix
  • ½ or full packet of Taco Bell Taco Seasoning (I used entire pkg)
  • 2 tablespoons cumin (more or less, according to taste)
  • Shredded cheddar cheese
  • Sour Cream
  • Doritos or Fritos


  • Instructions:
    Brown your ground beef. Drain and set aside. Add a little olive oil to pan and cook onions until soft and clear. Add meat and onion mixture to crockpot.

    Open cans for the remaining ingredients (DO NOT DRAIN!!) and add to mixture. Add Ranch dressing mix, taco seasoning and cumin. Heat thoroughly. Served with grated cheese, sour cream and chips.

    NOTE: You can throw in any type of canned beans. Kidney beans and chili beans also work well. Experiment!

    SOUP SUPPER:
    Our soup supper was a great success! I have quite a few emails and compliments from folks who attended that really loved our variety of soups. One family was sharing with me how it's their favorite soup supper because of all to choose from. Of course it takes everyone's help and it really worked out nicely.

    We did learn a couple of things. Trays are important...lol. Don't know why I forgot those on my list. Two lines worked out best instead of one. I did hear there was a complaint that we weren't serving the soups. The reason for that is since there were so many kinds it would be a little crazy with managing all that in the kitchen. Even with a menu board, I've found that sometimes folks get up to the serving spot and start asking what all the soups are and trying to decide takes time for each person so having them all out, labeled lets people see for themselves if one is finished instead of continuously asking if there's anymore of one kind. I remember folks wanting 2 bowls right away of two different kinds and with them serving, they can see if they can carry all that or if they want to come back for more later. That also gives others a chance to have variety. I don't know...you all who worked it; let me know your input and suggestions as to what we can do to make it better.

    We made $253.01. That is awesome! I am putting $13.oo of it in our bank account since we don't collect any dues for our guild. So I'll turn in $240 to Altar Society to give to charities. What they have done in the past is total all guilds' soup supper income and give the same amount to our charities. I figure we don't need much to run our guild so when we do our Santa Breakfast and soup suppers, we just throw a little extra in our account for small things we may need along the way. We did have to buy a few desserts for our last funeral and that was handy to have $10 or so. No biggy.

    So great job everyone! Thanks for all of your goodies ...desserts were fantastic....the soups were tasty and the smiling faces in the kitchen were welcoming.

               

    FUNERAL DINNER:
    Our guild hosted the funeral dinner for John Dean on Friday, Feb. 15th at noon. They were expecting 55 people, but we had more attend. It was a success. As a guild though, we really need to work out some kinks as far as workers go. It was hard working the lunch for that many people without enough helpers. To those who did stay and help, I sure appreciated it.

    PROGRESSIVE TOUR

    We received a thank you card from Gerard House for St. Anne's Guild $300 donation to Gerard House. We also received a card from Father Wayne thanking us for our contribution to the building fund.


    COMING UP:
    CALENDAR
    April 10th - General Altar Society Meeting 7pm here at Knights Hall hosted by St. Bernadette Guild

    April 12th - Food Handlers Class (free) at Resurrection 9:30am if you're interested in helping at Lord's Diner.

    May 8th - St. Anne's Guild is hosting the general Altar Society meeting and it's a covered dish dinner so all guilds are participating in bringing something to eat but we need to host it so I'll need some help in decorating and setting up that Thursday evening. We are responsible for providing some entertainment or as a host having a presentation or speaker come in. Anyone have any ideas?

    May 17th - Old Chapel Cleaning day 8:30-10:30am ....all guilds participating to help clean and polish up the old chapel by school...bring your gloves, rags or bucket...we do glass, brass, murphy oil the pews, vacuum...bring your vaccuum if you like and extension cord.

    June - St. Anne Guild working Scrip for that month...check your schedules to see if you're available...

    June 26th - St. Anne's Guild is working Bingo at Westview Manor, 2pm...

    Summer - No meetings until September 11th-general Altar Society Meeting at Knights Hall 6:30pm covered dish.

    MEETING
    Meetings suggestions:
    - Possible meeting at the Buckle for a night of style and color, plus what's hot for Spring
    - Participating in a Tai Chi class or possibly a Yoga class together.
    - Death by Chocolate at Exploration Place (a little pricey)
    - Setting up at someone's home
    - Meeting in the gym for a body and mind workout
    - Meeting at the DRC

    Fridays are still the suggested day for our meetings.

    2008 SANTA BREAKFAST
    Mark your calendars for December 7th, 2008 for our Santa Breakfast. We will not be including the Cookie Walk this year with the Santa Breakfast; there is simply not enough room for two guilds to hold two events in the small space.
